The Meat Shop of Tacoma has not been immune to the downturn in our economy. We have had an amazing run and would like to thank all of your for your business and friendship over the past 49-1/2 years.
After heartfelt deliberation Dad has decided to retire and I will be moving on to pursue other endeavors. Closing The Meat Shop will give Dad the opportunity he needs to focus on his health and the Organic Farms.
We are looking forward to a new chapter in our lives and wish everyone a happy and healthy future.

CLOSING DATE AND TIMELINE:
Dad and I are planning on closing The Meat Shop by August 12, 2012 or before depending on product availability. If it appears we will be closing prior to August 12 or reducing our business hours due to product liquidation and availability we will post a notice via our facebook and email list.
PRODUCT SCHEDULE AND PURCHASING AVAILABILITY:
THE MEAT SHOP'S OWN ORGANIC BEEF:
We will continue to cut our own fresh Organic Beef twice a week for the next 5 to 6 weeks for the retail counter. Bulk orders by the whole, half, and quarter will also be available custom cut and wrapped per customers instructions.
Our Organic Beef will not be available fresh cut after the end of May beginning of June. Frozen cuts will be available until each cut is sold out.
After The Meat Shop is closed Dad will continue to raise and sell Organic whole live beef cattle. Cutting, wrapping, and slaughter arrangements will need to be made by the customer. Live cattle can be purchased by calling The Meat Shop's phone number 253.537.4490 and leaving a message.
My cousin Joe Markholt and his wife Sona run Salmon Creek Meats in Mossyrock. They can provide the cutting and wrapping as well as assist with a reference for the slaughter facility 360.985.7822.
THE MEAT SHOP'S OWN CURED MEATS, LUNCHMEATS, AND SAUSAGES:
We will continue making our own cured meats, lunchmeats, and sausages until we are sold out of the beef and pork products we need to make them with.
ROSIE ORGANIC CHICKEN, DIESTEL TURKEY PRODUCTS AND WOODLAND FARM DUCKS:
There will be three more weeks of orders for the chicken, turkey, and duck products. The last fresh order will arrive May 3. No additional orders will be delivered after May 3. Frozen products will be available until sold out.
FREE RANGE PASTURED NATURAL PORK AND LAMB:
Pork can be ordered by the whole, cut, wrapped and smoked according to customer's instructions until June 1. Cuts are limited to quantity on hand.
Lamb can be ordered by the whole, cut and wrapped according to customer's instructions until June 1. Cuts are limited to quantity on hand.
GEESE, BISON, RABBIT, CHEESE, AND APPLEGATE FARMS PRODUCTS:
Limited to cuts and quantity on hand.
CUSTOMER CARDS AND WEEKLY SPECIALS:
All customer cards with items due will be honored as long as stock is available. After April 21 customer cards will be discontinued. Therefore, all purchases after April 21 will not be applied to customer cards and no additional cash discounts or free items will be given at point of sale.
There will be one more week of Weekly Specials offered April 18-24. After April 24 Weekly Specials will be discontinued. No rain checks will be given to the last week of Weekly Specials products. Products and sales prices are limited to quantity on hand.
CUSTOM CUTTING AND WRAPPING, SMOKING AND CURING:
We will continue to take in custom beef, pork, lamb, goat, etc. for the custom cutting, wrapping, smoking and curing until June 1. After June 1 our customers can have their cutting, wrapping, smoking, and curing done by my cousins Bob and Joe Markholt and Joe's wife Sona at Salmon Creek Meats in Mossyrock 360.985.7822 or by the shop of their choice.
The Meat Shop of Tacoma is located on a nine-acre farm about ten miles south of Tacoma, Washington. Bob and Lee Markholt moved there as boys 60 years ago, and soon began feeding cattle organically. The brothers started to feed cattle commercially 55 years ago, expanding as Bob's sons joined the crew, into custom cutting, poultry raising and curing meats. The Meat Shop of Tacoma was born in 1963 and expanded again with a full retail counter in 1972. Today, the Meat Shop is owned and operated by Lee and his daughter and staffed by a knowledgeable crew.

Quality meat is well worth paying more for because it's meat and just meat -- free of steroids, antibiotics, hormones, genetically-modified foods, ground up members of the same species. I tend to think that those who pay less for meat in the long run pay a lot more for healthcare as a result of all the additives. I was a vegetarian for ten years, in part after learning how animals are so badly mistreated by commercial farmers/slaughterhouses. Having been a Meat Shop customer now for many years, I know now how well these animals are loved and treated. That means a lot to me, especially if there's any truth to "you are what you eat."
